Mining is really fun in Minecraft but there isn’t just a huge variety of different ores that could make it even more fun than how it is now. I compiled some of the most interesting ore mods I found out there, not all of them add new ores to the game (most of them do though) but they certainly make mining in Minecraft a much more fulfilling experience.

Ores Above Diamonds

Ores Above Diamonds adds new ores to the game that are much rarer than diamonds and should be found in the late-game period of the playthrough. It adds Amethyst and Black Opal which are very strong, and hence very rare. They’re also stylish.
New Ores and Armors

New Ores and Armors adds a ton of new ores into the game that you most likely know from real life. It adds Ruby, Sapphire, Topaz, Moonstone, Sunstone, Bronze, Onyx, Silver, Steel, Angelite, Turmaline, Tanzaline, Platinum and Uranium ores! That’s a whole lotta of ores you can find in your world.
Wood Ores

Wood Ores adds wood ores into the game! Which may seem useless but it’s actually more useful than you can imagine. It happened to me a lot of the times that I need wood for sticks while underground and there’s just no way to obtain it without going out of the mine. So it’s quite useful for those kinds of situations.
SimpleOres

SimpleOres is one of the simpler ore mods on this list, just like the name of the mod suggests. It adds Copper, Tin, Mythril, Adamantium, and Onyx ores which you can find in your Minecraft world (although Onyx is only in the Nether).
Super Ores

Super Ores can make searching for ores underground a little bit more rewarding since with this mod ores can spawn in larger quantities in one block. What that means is that you can get more ores from one ore block and you can easily configure the mod if you want to change things around in it.
GrowableOres

Have you ever wanted to grow ores in the game? Well, now you can. With GrowableOres you can grow ores as you would grow sugar cane in the game which makes it very easy to farm them without venturing into the mines too frequently. I think it’s a very fun concept so I had to include it here.
Overworld Netherite Ore

If you are tired of going into the Nether dimension to search for Netherite then you should get this mod that’ll make it easier for you to find Ancient Debris, since it’ll be spawning in Overworld. Normal Ancient Debris spawns between Y32 and Y-12, Deepslate Ancient Debries between Y16 and Y-60, and Ancient Debris between Y16 and Y-60.
Netherending Ores

Netherending Ores will allow all ores in the game to spawn across all dimensions. Now you can find diamonds in the End, coal in the Nether, and etc. This mod is also compatible with plenty of other modded ores from Thermal Foundation, Applied Energistics, Mekanism, Original art, Extreme Reactors, Railcraft, Matter Overdrive, Project: Red, Tinker’s Construct, and Aether II.
More Useful Copper

Since copper in Vanilla Minecraft isn’t as useful as it should be (at least imo), More Useful Copper takes care of that and adds plenty of uses for copper into the game. Now you’re able to have copper armor and tools, buckets, horse armor, and even a Copper Golem!
Oreberries Replanted

Another mod with which you can quite literally grow ores in Minecraft is Oreberries Replanted. With this mod, you can grow various different ores as berries and that way have a farm of them. You can even get the delicious Oreberry Juice from them, and this mod also supports ores such as Aluminum, Copper, Lead, Nickel, Osmium, Silver, Tin, Uranium, and Zinc!
Vulcanite

Nether is known for having practically no ores (besides Quartz and Netherite). It’s a barren wasteland, and the Vulcanite mod is here to spice up the mining ecosystem in the Nether. Vulcanite adds an ore called Vulcanite into the game which will protect you from fire, allow you to walk on lava, and provide you with a toolset that works very efficiently in the Nether. And it looks cool.
Ender Ore

Ender Ore is a simple mod that adds a quite simple ore into the game which when mined drops dust with which you can craft Ender Pearls. This mod is good if you want a different way of getting Ender Pearls, and the ore has a nice design.
Lucky Ores

Everyone has played Lucky Blocks or at least everyone knows what they are and how they function, the Lucky Ores mod adds lucky ores which are basically natural spawning lucky block ores you can find underground. Mining one of these will provide you with an interesting random event – it makes mining more fun in my opinion.
Ore Stone Variants

Ore Stone Variants doesn’t add any new ores into the game, but it makes you able to find ores in different types of blocks such as Diorite, Andesite, Granite, and any other block you choose. You can configure everything with ease to fully customize your mining experience in the game.
Randomite Classic

Randomite Classic adds a new type of ore into the game called Randomite. Once you mine this ore there’s a chance you will get one of the following items: Diamond, Emerald, Eggs, Raw Gold, Raw Iron, Raw Copper, Lapis Lazuli, Coal, Redstone, Quartz, and Slime Balls. It adds a factor of luck into mining which is quite fun.
Mythic Metals

Mythic Metals is one of the most interesting Minecraft mods that adds new ores into the game. It adds so many new ores into all three dimensions such as Mythril, Starrite, Unobtainium, Prometheum, Palladium, Midas Gold, Banglum, and etc. The mod also adds an Alloy Forge into the game, along with Banglum Nukes and many other cool stuff.
